A Perfect Pot of Mussels

perfect pot of mussels You know I like easy... and this one is EASY!  20 minutes from start to finish. INGREDIENTS 1 large Leek or Onion- chopped or sliced (your choice) 2 T Olive Oil or Unsalted Butter 2 Lbs Mussels - scrubbed and de-bearded 1 C. Seafood Stock or Water or Wine or Beer 2 to 3 springs Rosemary or Thyme or Parsley...or a combo (optional) HOW I DO IT
  1. In a large pan over medium-high heat, heat 1 T. Oil.
  2. Add in the leek. Cook, uncovered and stirring often, till Leek begins to soften.
  3. Add in the Stock, the Mussels and the Rosemary.
  4. Cover and cook until the Mussels have opened completely, 3-5 minutes.
  5. Discard any Mussels that have not opened. Toss with remaining Oil.
  6. Serve Mussels and Broth in shallow bowls with crusty bread.​​​​​​​
