A Perfect Pot of Mussels

You know I like easy... and this one is EASY! 20 minutes from start to finish.
INGREDIENTS 1 large Leek or Onion- chopped or sliced (your choice) 2 T Olive Oil or Unsalted Butter 2 Lbs Mussels - scrubbed and de-bearded 1 C. Seafood Stock or Water or Wine or Beer 2 to 3 springs Rosemary or Thyme or Parsley...or a combo (optional)
HOW I DO IT- In a large pan over medium-high heat, heat 1 T. Oil.
- Add in the leek. Cook, uncovered and stirring often, till Leek begins to soften.
- Add in the Stock, the Mussels and the Rosemary.
- Cover and cook until the Mussels have opened completely, 3-5 minutes.
- Discard any Mussels that have not opened. Toss with remaining Oil.
- Serve Mussels and Broth in shallow bowls with crusty bread.
